Ingredients:
4-6 eggs (boiled, shelled and sliced in 2)1 tsp mustard seeds
1 tsp jeera
4-6 cloves garlic (crushed)
1/4 tsp ajwain (carom seeds)
1/2" ginger (chopped)
2-3 green chilis (chopped)
1 onion (sliced)
1 tomato (chopped)
200 ml tomato paste
1 tbsp garam masala
1/2 tsp turmeric powder
vinegar or tamarind water or lemon juice to taste
salt
oil
Steps:
- In a vessel, heat oil.
- Add tempering with whatever you like - mustard, jeera, crushed garlic, ajwain etc
- Add sliced ginger, green chili, onions and tomatoes. Keep stirring till it becomes soft.
- Add one packet of tomato paste and keep stirring continuously for 5-10 minutes till paste cooks and mixes well.
- Add garam masala powder, turmeric, vinegar/tamarind juice/lemon juice and salt.
- Keep mixing and then add eggs.
- Coat the egg slices with the ready masala.
