Egg Masala - Cellu

Ingredients:

4-6 eggs (boiled, shelled and sliced in 2)
1 tsp mustard seeds
1 tsp jeera
4-6 cloves garlic (crushed)
1/4 tsp ajwain (carom seeds)
1/2" ginger (chopped)
2-3 green chilis (chopped)
1 onion (sliced)
1 tomato (chopped)
200 ml tomato paste
1 tbsp garam masala
1/2 tsp turmeric powder
vinegar or tamarind water or lemon juice to taste
salt
oil

Steps:

  1. In a vessel, heat oil. 
  2. Add tempering with whatever you like - mustard, jeera, crushed garlic, ajwain etc 
  3. Add sliced ginger, green chili, onions and tomatoes.  Keep stirring till it becomes soft.
  4. Add one packet of tomato paste and keep stirring continuously for 5-10 minutes till paste cooks and mixes well. 
  5. Add garam masala powder, turmeric, vinegar/tamarind juice/lemon juice and salt.
  6. Keep mixing and then add eggs. 
  7. Coat the egg slices with the ready masala.
