SUKKA POWDER:
1 cup coriander seeds (rice spoon)

CHICKEN SUKKA
Ingredients:
1 kg chicken
2 medium onions (sliced)
3 cloves garlic
2-3 sprigs curry leaves
1/2 - 1 cup grated coconut
salt
salt
3 tbsp ghee
Steps:
Prepare the sukka powder:
- Roast each spice separately making sure not to burn it. Powder all together and store for future use.
Prepare the chicken sukka:
- Boil chicken with salt, 1 onion, garlic, 3-4 tbsp sukka powder and 1/2 cup water. Transfer to a large bowl.
- In the same vessel, heat ghee.
- Add 1 sliced onion with curry leaves. Fry till onions turn slightly brown.
- Add grated coconut. Saute for 2 minutes.
- Add the cooked chicken with the broth and give it a good boil till the broth evaporates.
