The Mangy Kitchen Dal Tadka recipe


















Ingredients:
1 cup toor dal (240gms)
The Mangy Kitchen Dal Tadka2 medium onions (chopped finely)
2 medium tomatoes (chopped)
4 tbsp chopped coriander leaves
2 green chillies (chopped)
1 1/2 tsp red chilli powder
1 tsp turmeric powder
1 tsp cumin seeds
3-4 tbsp ghee or oil

For tadka:
The Mangy Kitchen Dal Tadka2 tbsp oil or ghee
2 dry red chillies
4 cloves garlic (chopped)
pinch of hing

Steps:
  1. Cook dal with 2-3 cups of water in a pressure cooker with 1 to 2 tsp oil (so that scum will not form) for 3 whistles (depends on the dal so cook till it is soft and mashable)

  2. Heat ghee or oil and add cumin. When it starts spluttering, add onion and fry till it is translucent (Adding salt speeds up the process of cooking onion).
  3. Once onion is cooked, add green chilli and tomatoes and fry till the mixture gets cooked.
  4. Add all powders and fry well. 
  5. Add cooked dal, mix well and add salt and give a boil (if it is thick, add a bit of water but don't make it watery). Once boiled, add coriander leaves and put off the gas. 

  6.  For tadka, heat oil or ghee and add chopped garlic, dry chillies, garlic and fry till the garlic turns into light golden. Add hing and pour over the dal and close the lid immediately. Do not mix so that all flavors will be incorporated.

Notes:

  1. Dal is tastier when prepared using ghee.
  2. Eat with chapati or raw rice (sona masoori or basmati)
