Green Peas and Potato Curry - Maizy Aunty

Ingredients:
1 - 2 potatoes (chopped into small cubes)
1 - 2 cups frozen/dry green peas (if dry, soak for 5-6 hours)
salt

To grind:
1 onion
4 cloves garlic
1 cup fresh grated coconut
1 - 2 tbsp vegetable powder (depending on spice level)

For seasoning:
1 tsp mustard seeds
3 - 4 cloves garlic (crushed)
coconut oil

Steps:
  1. Grind the onions, garlic, coconut and vegetable powder to a fine paste. Keep aside. 

  2. Boil green peas with salt and sufficient water. When almost cooked, add the potatoes.
  3. Once it is cooked, add the ground masala, fry it.
  4. Add water and bring to a boil. Adjust salt, if needed.
  5. If the curry is thin, thicken with coconut milk powder.

  6. Separately, heat coconut oil. 
  7. Fry the mustard seeds and garlic. Add it to the potato and peas curry and mix.
  8. ENJOY!
Notes:
  • Optional: Add 1 tsp sugar to the curry at the end for better taste.
  • You can add paneer cubes to this dish.
