'Junglee Chicken Club' Sandwich - Chrysl

Ingredients:
3 slices sandwich bread
3-4 tbsp homemade mayo (link to recipe here)
1/2 cup chicken (boiled and shredded)
1 tbsp cabbage (shredded)
1 tbsp onion (chopped)
1 tbsp capsicum (chopped)
1 egg
1-2 bacon rashes
1 slice cheese
3-4 slices of cucumber
2-3 slices of tomato
2 tbsp butter
salt and pepper to taste

Steps:
  1. Fry the egg (bullseye or omelet) and keep aside.

  2. Fry the bacon and keep aside.

  3. In a bowl, mix the chicken and vegetables along with the homemade mayonnaise.
  4. Add salt and pepper to taste.
  5. Butter all 3 slices of bread.
  6. Spread the chicken mixture onto one slice of bread and place the cheese slice on top and cover with another slice of bread.
  7. On the buttered side of this slice, place the cucumber, tomatoes, fried egg, fried bacon (in this order) and cover with the buttered side of the third slice.
  8. Cut into triangles or squares.
