Ingredients:
3 slices sandwich bread
3-4 tbsp homemade mayo (link to recipe here)
1/2 cup chicken (boiled and shredded)
1 tbsp cabbage (shredded)
1 tbsp onion (chopped)
1 tbsp capsicum (chopped)
1 egg
1-2 bacon rashes
1 slice cheese
3-4 slices of cucumber
2-3 slices of tomato
2 tbsp butter
salt and pepper to taste

2-3 slices of tomato
2 tbsp butter
salt and pepper to taste
Steps:

Fry the egg (bullseye or omelet) and keep aside.
- Fry the bacon and keep aside.
- In a bowl, mix the chicken and vegetables along with the homemade mayonnaise.
- Add salt and pepper to taste.
- Butter all 3 slices of bread.
- Spread the chicken mixture onto one slice of bread and place the cheese slice on top and cover with another slice of bread.
- On the buttered side of this slice, place the cucumber, tomatoes, fried egg, fried bacon (in this order) and cover with the buttered side of the third slice.
- Cut into triangles or squares.
