Rajasthani Laal Maas (Red spicy mutton curry) - Sheru

Ingredients:
1 kg mutton 
2 star anise 
1" cinnamon stick
10 cloves
1 tbsp pepper corns
2 bay leaves
1 big onion (chopped)
1 large tomato (chopped)
1" ginger (chopped)
1 pod garlic (chopped)
5-10 green chillies (chopped)
salt to taste
2 tbsp kashmiri chili powder 
1 tsp turmeric powder
2 tbsp coriander powder
1 1/2 tsp garam masala powder (garnish)
handful kasuri methi (garnish)
4-5 tbsp mustard oil
chopped coriander leaves

Steps:
  1. In a vessel, heat mustard oil.
  2. Add star anise, cinnamon, cloves, pepper corns and bay leaves. Fry for 2-3 minutes.
  3. Add chopped onion, ginger, garlic and green chillies. Cook till onions change color.
  4. Add kashmiri chili powder, coriander powder, salt and turmeric. Mix well and cook for 5 minutes.
  5. Add chopped tomatoes and cook with 1/4 cup water till the oil separates and the masala is cooked.
  6. Add the mutton pieces and cook on low flame for about 30 minutes. Don't add water initially. Add water according to the desired consistency as you stir the meat. 
  7. Once the mutton is cooked, add garam masala powder and kasuri methi and mix together well.
  8. Garnish with chopped coriander leaves and green chillies if desired. 
  9. ENJOY!
Notes:
  • Adjust green chilies and chili powder to your spice level.
