Ingredients:
1 kg mutton

2 star anise
1" cinnamon stick
10 cloves
1 tbsp pepper corns
2 bay leaves
1 big onion (chopped)
1 large tomato (chopped)
1" ginger (chopped)
1 pod garlic (chopped)
5-10 green chillies (chopped)
salt to taste
2 tbsp kashmiri chili powder
1 tsp turmeric powder
2 tbsp coriander powder
1 1/2 tsp garam masala powder (garnish)
handful kasuri methi (garnish)
4-5 tbsp mustard oil
chopped coriander leaves
Steps:
- In a vessel, heat mustard oil.
- Add star anise, cinnamon, cloves, pepper corns and bay leaves. Fry for 2-3 minutes.
- Add chopped onion, ginger, garlic and green chillies. Cook till onions change color.
- Add kashmiri chili powder, coriander powder, salt and turmeric. Mix well and cook for 5 minutes.
- Add chopped tomatoes and cook with 1/4 cup water till the oil separates and the masala is cooked.
- Add the mutton pieces and cook on low flame for about 30 minutes. Don't add water initially. Add water according to the desired consistency as you stir the meat.
- Once the mutton is cooked, add garam masala powder and kasuri methi and mix together well.
- Garnish with chopped coriander leaves and green chillies if desired.

Notes:
- Adjust green chilies and chili powder to your spice level.
