Ingredients:
10 round red chillies (cut 1 into 3 pieces)
1 medium onion (sliced)
7-8 garlic cloves (mashed, with skin)
1 tsp mustard seeds
1 ball tamarind (soaked in a bowl and squeezed) or 1 tbsp tamarind paste
3-4 tbsp of sugar (or a piece of jaggery)
1/2 - 1 tbsp salt
3 tbsp coconut oil

Steps:
- Heat oil.
- Add mustard seeds.
- When they crackle, add garlic. Let the garlic brown.
- Then add the red chillies and fry till they turn dark brown. Make sure not to burn it.
- Add the onions, fry till golden brown.
- Then add 3 cups of hot water along with the tamarind, salt and sugar and let it boil for 5-10 minutes.
- Adjust sugar, salt or tamarind, if needed. The saar must be sweet, spicy and sour, all at once.
