Mutton Curry - Philip Bavoji

Ingredients: 
1 kg mutton (cleaned and cut)
1/4 tsp turmeric powder
salt to taste
1 tbsp vinegar
2 tbsp chopped coriander leaves (garnish)

Fry the below separately and grind to a very fine paste
3 tsp jeera
2 tsp coriander seeds
9 cloves
3" piece cinnamon
1 tsp khus khus
7 red chillies (kashmiri or byadgi)
13 pepper corns
3 cardamom
1 big onion (cut and fry until rawness goes)
1 big pod garlic (cut and fry until rawness goes)
10 grains methi/fenugreek 
1 star anise

For seasoning:
1 onion (sliced)
2 sprigs curry leaves
1-2 green chillies
1" ginger
2 medium tomatoes
oil

Steps:

  1. Cook mutton with vinegar, salt and turmeric powder. 
  2. Add the ground masala to the cooked mutton.
  3. Add water and bring to a boil.
  4. Separately, heat oil. Fry onions till brown. Add curry leaves, green chillies, ginger, tomato and fry. 
  5. Add to the curry and mix.
  6. Garnish with coriander leaves.
