Ingredients:
1 kg mutton with bones and a little fat (clean and cut into medium bite size pieces)
1/4 tsp turmeric powder
3 medium potatoes
1 tsp sugar
For grinding:
Powder the below ingredients first:
8 byadgi chillies
4 Kashmiri chillies
4-6 cloves
1" cinnamon piece
3 small whole cardamom
10 pepper corns
1 1/2 tsp cumin seeds
Grind the powdered ingredients with:
3 medium onions (chopped into big pieces)
3 medium cloves garlic
1" ginger (chopped)
handful of mint leaves
3 tbsp raisins
marble size ball of tamarind
2 green chillies (non spicy, cut into big pieces)
1/2 tsp turmeric powder
For frying the masala
1 medium onion (thinly sliced)
3 tbsp ghee or oil ( preferably ghee for flavor and taste)
Steps:
- Rinse meat thoroughly in water and drain the water.
- In a pressure cooker, add the meat along with salt, turmeric powder (removes smell from the meat) and 2 cups of water. Water should be above the meat level.

Cook on medium high flame for 1 whistle and continue cooking on medium flame till the meat is cooked. Save the broth (Time taken to cook and number of whistles depends upon the meat)

Rinse, peel and cut the potatoes into medium size pieces and place them in a bowl of water and keep aside.
- Powder the byadgi chillies, Kashmiri chillies, cloves, cinnamon, cardamom, pepper corns and cumin seeds.
- Add the powdered spices to a mixie jar with onions, ginger, garlic, mint leaves, raisins, tamarind, green chillies, turmeric and a little water. Grind together into a smooth, thick paste and keep aside.
- In a non-stick vessel, heat ghee on medium flame.
- Add sliced onion and fry till light golden.
- Add the ground masala paste and fry for 5 minutes.
- Add 1/4 cup water in to the mixie jar and add the masala water to the fried masala and continue frying for 10 more minutes till the oil separates.
- Add boiled mutton with the stock and mix well.
- Add water if required (the gravy should be semi thick).
- Give a good boil and check for salt.
- Add potato pieces and continue cooking till it is done (Do not over cook the potatoes)
- Add 1 tsp of sugar and mix well before switching off the gas.
