Ingredients:
500 gms pancit bihon (thin rice noodles/rice stick)
250 gms chicken (cooked, deboned and cut into thin strips)
250 gms pork (cut into small, thin slices) - *Optional
250 gms chicken liver - Optional
1 cup beans (cut into long strips)
1 cup carrot (cut into long strips)
1 cup celery leaves (cut into long strips)
1/2 small cabbage (cut into long strips)
4 - 5 tbsp soy sauce
2 medium yellow onions (chopped)
4 large cloves of garlic (chopped)
3 tsp white pepper powder (add more according to taste)
4 tbsp cooking oil
4 cups water
1 chicken cube
1 lime/lemon juice

Steps:
- Boil chicken with 4 cups of water and a chicken cube. Once cooked, de-bone and cut into strips. Reserve the chicken stock.
- Heat oil in a large pot, saute garlic and onion.
- Add pork and cook for some time.
- Add chicken strips and mix well.
- Add beans, carrot and celery and mix for 2 minutes.
- Add cabbage and cook for 3 minutes stirring once in a while.
- Then add the chicken stock and bring to a boil.
- Add the soy sauce and then add the pancit bihon (make sure to soak it in water for 10 minutes and drain it before adding)
- Cook until the liquid evaporates completely, then add pepper. Mix well and simmer for 1 to 2 minutes.
- Squeeze some lime juice before serving. Serve hot.

Notes:
If you have a pair of long chopsticks, use the chopsticks instead of spatula when mixing. This will ensure that the rice sticks won't break too much.

The pancit tastes better when there is a bit of excess sauce (depends on your taste)
