Pov with cashew nuts, dal and coconut (Panchakajjaya) - Rosybai

Ingredients:
2 cups thin pov/poha/beaten rice
1/2 cup moong dal
1/2 cup jaggery
1 cup fresh grated coconut
3 cardamoms
1 tbsp ghee
10 cashews
pinch of salt (optional)

Steps:
  1. Dry roast the moong dal and powder coarsely.
  2. Powder the jaggery and add to freshly grated coconut.
  3. Add pov to moong dal and mix with jaggery and coconut.
  4. Add powdered cardamoms.
  5. Add a pinch of salt if desired.
  6. Heat ghee, fry cashews till golden brown.
  7. Mix in 1 tbsp hot ghee to the mixture of pov.
  8. Garnish with cashews and serve.
  9. ENJOY!
