Tabbouleh - Polly aunty

Ingredients:
1 bunch parsley
1 bunch cilantro/coriander leaves
handful of mint leaves (optional)
1 onion (chopped very finely)
3-4 small tomatoes (chopped finely)
3 tbsp burgul/bulgur wheat
1 lemon - juice
olive oil
salt

Steps:
  1. Soak bulgur in hot water till soft. Drain and set aside.

  2. Wash the parsley, cilantro and mint leaves well and drain. Chop finely.

  3. To a large bowl, add the chopped parsley, cilantro and mint leaves.
  4. Add lemon juice and mix well.  
  5. Add onions, tomatoes, and salt. Mix well.
  6. Add the bulgur followed by olive oil. Give it a good toss. 
  7. ENJOY!
