Ingredients:
3 slices sandwich bread
3-4 tbsp homemade mayo (link to recipe here)
1 burger patty or frozen chicken fillet (store bought)
1 tbsp onion (chopped)
1 tbsp tomato (chopped)
1 tbsp capsicum (chopped)
8-10 thin slices of cucumber
1 egg (lightly beaten)
salt and pepper to taste
cheese slices (optional)
Steps:
To assemble the sandwich

1 tbsp tomato (chopped)
1 tbsp capsicum (chopped)
8-10 thin slices of cucumber
1 egg (lightly beaten)
salt and pepper to taste
cheese slices (optional)
Steps:
- In a bowl, mix the chopped vegetables and mayonnaise together. Add salt and pepper to taste and keep aside.
- Separately, break an egg in a bowl and beat it. Add a pinch of salt and pepper to the beaten egg and fry an omelet and keep aside.
- Now fry the burger patty / fillet and keep aside.
To assemble the sandwich
- Spread about a tablespoon of the vegetable mixture on the bread.
- Place few slices of cucumber and then the burger patty followed by a slice of cheese and another slice of bread.
- Spread some more vegetable mixture then the cucumber, the omelet, another slice of cheese and cover it with the final slice of bread.
- Cut the sandwich in the centre or diagonally for two triangles.
