Ingredients:
3 big brinjals (dark brown)
5 long red chillies (kashmiri/byadgi)
3 onions (sliced)
1/2" ginger (chopped)
salt
vinegar
oil
1/4 cup warm water
Ingredients:

Steps:
- Cut brinjal in to thin slices.
- In a pan, heat 3 tbsp oil. Add brinjal slices and fry for about an hour. The longer you fry, the tastier it becomes. Be careful not to burn it. Once fried, keep it aside.
- Separately, heat 1 tsp oil. Add long red chillies and fry.
- In a large bowl, add the sliced onions, ginger, salt and vinegar and mix well.
- Add the fried red chillies, fried brinjals and about 1/4 cup warm water if it is too dry. Mix well.
