Vainge (brinjal) Chutney - Polly aunty

Ingredients:
3 big brinjals (dark brown)
5 long red chillies (kashmiri/byadgi)
3 onions (sliced)
1/2" ginger (chopped)
salt
vinegar
oil
1/4 cup warm water

Steps:

  1. Cut brinjal in to thin slices.
  2. In a pan, heat 3 tbsp oil. Add brinjal slices and fry for about an hour. The longer you fry, the tastier it becomes. Be careful not to burn it. Once fried, keep it aside. 
  3. Separately, heat 1 tsp oil. Add long red chillies and fry.
  4. In a large bowl, add the sliced onions, ginger, salt and vinegar and mix well.
  5. Add the fried red chillies, fried brinjals and about 1/4 cup warm water if it is too dry. Mix well.
  6. ENJOY!
