Ingredients:
3 cups rice (basmati/jeerakasala rice/gandhakasala rice)
1 large onion (sliced)
1 star anise
1" cinnamon
3-4 cardamom pods
1 tsp whole peppercorns
2 sprigs curry leaves
2 tsp sugar
6 cups boiling water
Steps:
Wash and soak the rice for about half an hour, then drain out the water and set aside.
In a large nonstick vessel, heat ghee.
Add star anise, cinnamon, cardamom, peppercorns and fry till aromatic.
Add the curry leaves and fry for about a minute.
Add sliced onions and fry till golden brown.
Add in the rice and fry for about 2-3 minutes till you get the aroma of the rice.
Pour in 6 cups of boiling water, add salt and sugar.
Cover and cook on low flame till the water is absorbed and rice is cooked (about 10 minutes)

1 tsp salt2 tsp sugar
