Masala Pov/Bajil from scratch - Rosy aunty

Ingredients:
To make masala pov:
2 cups thin pov/poha
4-5 tbsp jaggery/sugar
1/2 cup fresh coconut
spice mix (recipe below)
oil

For tempering
2 tsp oil
1/2 tsp mustard seeds
2 red chillies
1/4 tsp turmeric powder
few curry leaves

To make the spice mix:
3 red bydagi chillies
1 tsp cumin seeds
Make extra spice mix for future use
1 tbsp coriander seeds
1 sprig curry leaves

Steps:
To make spice mix (for 2 cups pov):

  1. Heat oil in a pan. 
  2. Add chillies, coriander seeds, cumin and curry leaves. Saute for 2 minutes (do not burn).
  3. Let it cool and grind to make a fine powder.

To make masala pov:
  1. Take 2 cups of thin pov and sieve it to remove all extra fine powder
  2. In a mixing bowl, add spice mix powder, 4 to 5 tbsp powdered jaggery or sugar or both, fresh coconut and salt. Mix well. 
  3. Add beaten rice and mix everything well with your fingers. Sprinkle a few drops of water if the pov is too dry.
  4. Separately, in a tadka pan, heat 2 tsp oil and add mustard seeds. When it starts crackling, add turmeric, red chillies and curry leaves and saute for few seconds and pour it over the pov and mix it well.
  5. ENJOY!

Notes:
  • You can fry and powder extra spices to store spice mix for future use.
  • You can increase byadgi chillies in the spice mix if you like the masala spicy.
  • Adjust the jaggery/sugar according to your taste.
