Ingredients:
1/4 kg corn
1/4 kg green peas
2 medium potatoes (chopped in small squares)
2 medium onions (chopped)
2 medium tomatoes (chopped small)
1/2" ginger (chopped small)
7 cloves garlic (chopped small)
1 green chilli (chopped)
bimbli or tender mango (optional)
1 sprig curry leaves
1 tsp mustard seeds
3 tbsp sambhar powder
1 tsp turmeric powder
1/2 bunch coriander leaves (chopped)
2 tbsp oil
salt
1 tsp vinegar/ 2 marble sized ball tamarind paste
Steps:
- In a vessel, heat oil. Add curry leaves and fry for 30 seconds.
- Add mustard seeds.
- Once they crackle, add onion, ginger, garlic and chilli and saute for 2 minutes.
- Add tomatoes and saute for 5 minutes till tomatoes cook.
- Add sambhar powder, turmeric and 2 tbsp water. Mix well and let it cook for 2 minutes.
- Add vegetables and then add water as per desired consistency (make sure it is above the vegetables level).
- Add salt and vinegar according to taste. Bring to a boil.
- Garnish with coriander leaves.

Notes:
- Add any other vegetable to this dish - beans, drumsticks, ladyfinger etc
- For additional spice, you can add 1 tsp bafat powder or garam masala.
