Ingredients:
2 pork sausages (preferable herb and spice mixed for maximum flavor)
For the onion gravy:
2 medium onions (thinly sliced)
1 clove garlic (thinly sliced)
2 tsp oil
20g butter
1 tbsp flour
salt and pepper to taste
1/4 tsp sugar
1 cup beef bouillon water (concentrated) or use beef cubes
1/4 tsp cinnamon powder
For the couscous
1 cup medium grained couscous
20g butter
2 tbsp lemon juice
salt to taste
20g butter
2 tbsp lemon juice
salt to taste
pepper to taste
Steps:
For the onion gravy:
- In a pot, add oil and butter, then add onions and garlic and fry till slightly pink-brown. Do not over fry them.
- Add flour, salt and pepper, 1 cup of beef bouillon water, sugar and cinnamon powder and let cook till the sauce is completely cooked, thick and full of flavor.
For the sausage:
- Place the sausage vertically on the chopping board and make 5-6 horizontal slits along its length about 1cm apart on both sides.
- Add 1/2 tsp oil and fry the sausages till cooked inside and fried brown on the outside.
For the couscous
- Pour one cup of dry couscous into a big bowl.
- Add one cup of salted boiling water to the couscous to submerge it, and cover the bowl with a cloth.
- Let it stay untouched and covered for 10-15 mins.
- Once couscous has absorbed the water and fluffed up, add butter and lemon juice, and mix the couscous together.
Assembly:
- Place 3 heaping tablespoons of couscous mixture onto the serving dish. Place the fried sausage on top. Finally, top off with 2-3 big tablespoons of onion gravy.
- Serve hot with a nice pint of cold beer!
