Ingredients:
1 cup roasted rava
1/2 tsp mustard seeds
1 tsp urad dal
1 sprig curry leaves
1" ginger (finely chopped)
1 green chilli (finely chopped)
1 medium onion (finely chopped)
2 tbsp oil or ghee
2 1/2 cups water
Steps:
Adjust sugar, oil/ ghee according to your taste
Ingredients:

3/4 tsp salt
5-6 tsp sugar2 1/2 cups water
Steps:
- Clean and dry roast rava on low to medium heat until crunchy. Keep stirring, do not brown the rava as the flavor of upma changes. When it is crunchy, keep it aside.

Boil 2 1/2 cups of water with salt and sugar on low heat and keep aside.
- In a pan, heat oil.
- Add mustard seeds.
- As it crackles, add urad dal and saute on medium heat until golden.
- Add chopped green chilli, ginger and curry leaves. Fry for a minute.
- Add chopped onions and saute for 4 to 5 minutes or until the onions turn transparent.
- Add the roasted rava and mix.
- Pour the water slowly with one hand and stir the rava continuously with the other hand to prevent lumps. Break lumps if any until the water reduces. Cover and cook for 3 to 4 minutes. Open the lid in between and stir.
- Switch off the flame and leave it covered for 5 minutes
- Open the pan and fluff it.
