Sweet Potato Upkari (stir fry) - Rosy aunty

Ingredients:
250 gms sweet potato  
1 green chilli (chopped or slit)
1/2 tsp mustard seeds 
1/2 tsp urad dal 
few curry leaves
1/4 cup grated coconut (adjust as per your taste)
salt to taste
2 tsp oil 
pinch of hing powder 
1/2 tsp sugar (optional)

Steps:
  1. Wash and peel the sweet potatoes.  
  2. Cut into cubes and place them in a bowl of water.

  3. Heat oil in a kadai on medium flame.
  4. Add urad dal and saute.
  5. Once urad dal starts to change colour, splutter mustard seeds and saute.
  6. Add chopped green chilli and curry leaves and saute for few seconds. 
  7. Add hing and mix well.
  8. Drain the water and add cubed sweet potatoes and saute well.
  9. Add required amount of water and salt. Mix and cook until soft and almost dry.
  10. Add sugar (optional) and grated coconut. Stir and mix well. 
  11. Turn off the flame when the water is completely absorbed.
