Ingredients:
250 gms sweet potato
1 green chilli (chopped or slit)
1/2 tsp mustard seeds
1/2 tsp urad dal
few curry leaves
1/4 cup grated coconut (adjust as per your taste)
salt to taste
2 tsp oil
pinch of hing powder
1/2 tsp sugar (optional)
- Wash and peel the sweet potatoes.
- Cut into cubes and place them in a bowl of water.
- Heat oil in a kadai on medium flame.
- Add urad dal and saute.
- Once urad dal starts to change colour, splutter mustard seeds and saute.
- Add chopped green chilli and curry leaves and saute for few seconds.
- Add hing and mix well.
- Drain the water and add cubed sweet potatoes and saute well.
- Add required amount of water and salt. Mix and cook until soft and almost dry.
- Add sugar (optional) and grated coconut. Stir and mix well.
- Turn off the flame when the water is completely absorbed.
