Benda Theil Piyao (okra in oil & onion style) - Daisy aunty

Ingredients:
1 kg benda/okra or any other vegetable (cut into medium size pieces)
1 large onion (thinly sliced)
1/2" ginger (finely chopped)
2 green chillies 
2 tbsp oil
vinegar
salt
1/4 grated coconut

Steps:
  1. In a vessel, add oil, onion, ginger, chillies and the benda on top with a cup of water and bring to a boil.
  2. When almost cooked, add salt and vinegar and mix well. 
  3. Add coconut and bring to a boil. Mix well.
  4. Turn off the gas and cover.
  5. ENJOY!
Notes:
  • You can use the same recipe for spinach. Add 2 cloves of garlic when boiling and make it with or without grated coconut.
