Chicken Adobo - Oreen

Ingredients:
1 kg chicken with skin (preferably thighs)

To marinate:
1/4 cup white vinegar
2 tsp pepper powder

To cook the dish
1/4 cup soy sauce
2 cloves garlic (chopped)
1/2 tsp pepper corns
3 bay leaves
salt (optional - soya sauce has salt already)
oil 

Steps:
  1. Wash the chicken and add slits and drain excess water. 

  2. Marinate chicken with skin with pepper powder and vinegar for at least 1 hour.

  3. In a pan, heat oil.
  4. Add chicken and fry till chicken is half cooked. Keep the chicken aside.
  5. Add the chopped garlic and lightly fry. 

  6. In a vessel, add the half cooked chicken and fried garlic with the soy sauce, pepper corns and bay leaves. 
  7. Cook covered on low heat for 30 minutes, stirring occasionally till the chicken is fully cooked.
  8. Serve with steamed rice.
