Recipe by Cellu
Ingredients:
1 kg chicken pieces or thighs
1 kg mixed vegetables (see notes)
2 tsp pepper powder
2 chicken stock cubes
1.5" ginger (finely chopped)
6-8 cloves garlic (peeled and chopped)
3 onions (diced)
5-6 cloves

2-3 cardamom
4 bay leaves
4-5 red chillies
2" cinnamon
1 tsp pepper corn (optional)
1 tbsp corn starch (optional, add as required for thicker stew)

oil as needed
salt to taste
Steps:
- Cut and clean the chicken well. Drain the water and keep it aside.
- Heat oil, add onions and slightly brown them.
- Add ginger, garlic and cloves, cardamom, bay leaves, red chillies, cinnamon and peppercorn till aroma comes (2-3 minutes).
- Add chicken (see notes)
- Add pepper powder, salt, water and soup cubes and bring to a boil.
- When chicken is half cooked, add vegetables and complete cooking (pressurize if needed).
- Add corn starch if you prefer thickened gravy and bring to a boil.
- Serve hot with steamed rice, and if you prefer with some papad and pickle.

Notes:
- Some of the vegetables of your choice that can be added to this dish are: Potatoes, carrots, beans, cauliflower, mushroom, baby corn/corn, turnip, broccoli, sweet potato, yam etc
- This recipe can also be used for beef or mutton. Partially pressure cook the meat before adding vegetables to complete cooking.
