For the sauce:
Ingredients:
300 gms pasta
2 pcs chicken breast
2 onions (diced)
1 tsp garam masala
pinch of turmeric
1/4 tsp jeera powder
1 tsp pepper powder
1/2 tsp organic vinegar
salt
oil
3 tsp corn flour
1/2 cup milk
1/2 cup warm water
3 tbsp butter
3 tbsp olive oil
1 tbsp basil
1 tbsp thyme
1 tbsp oregano
Steps:
- Wash and cut the breast in cubes.
- Heat oil. Add onions and fry till brown.
- Add chicken pieces and garam masala, turmeric, jeera, pepper powders, salt and vinegar. Add water and let it cook for about 20 minutes.
- In a vessel, add pasta and water with 1/2 a tsp oil and a pinch of salt. Cover and cook for about 15 minutes with the lid on.
- In a cup, add 3-4 heaped tbsp corn flour, 1/2 cup milk and 1/2 cup warm water. Mix well and keep aside.
- In a kadai, heat butter and olive oil. Add basil, thyme, oregano and immediately mix the corn flour mixture and stir continuously till the sauce thickens and cooks (about 5 minutes) If needed, add hot milk.
- Add white cream or cheese to the sauce (optional - I did not add)
- Add the pasta and cooked chicken and mix well.
- Garnish with a twig of mint and sprinkle diced coriander leaves.
