Eggplant and Dry Shrimp - Aunty Yvonne

Ingredients
3 eggplants/brinjal/aubergine (cut in small pieces and soak in water)
dry shrimp
3 green chillies
1 tomato
3 medium onions (finely chopped)
2 pods garlic
1" ginger
1/2 tsp cumin seeds (optional)
1/2 tsp turmeric powder 
salt to taste

Steps:
  1. Heat oil. 
  2. Add cumin seeds, curry leaves and fry. 
  3. Add onions, green chillies, garlic, ginger, tomato and fry.
  4. Add the dry shrimp.
  5. Add the cut eggplant. 
  6. Add 1/2 glass of water, turmeric powder and salt.
  7. Cook on slow fire till eggplant is cooked.
  8. ENJOY!
