Ingredients:
1 kg pork
4 large onions (chopped)
20-25 cloves garlic (sliced)
1" ginger (chopped)
3 green chillies (slit or chopped)
3 lime sized tamarind (soak in water)
5-6 bay leaves
2" cinnamon (cut in to small pieces)
8-10 cloves
8 tbsp bafat powder (adjust if needed)
salt
pigs blood (wash 10 times and then soak in water)
Steps:
- Chop and wash the pork skin and pressure cook it till it is soft, 4-5 whistles or more if needed.
- Add the pork with the tamarind water, bay leaves, cinnamon, cloves, bafat powder and salt into a cooking vessel with 1 1/2 cups water and boil for about 30 minutes. Add water if required.
- Remove the bay leaves and discard.
- Add the onions, garlic, ginger and green chillies and mix well. Cook for about 3 minutes.
- Discard the water from the blood and give it a squeeze and add it to the pork dish and mix well. Cook for 2-3 minutes more.
- Switch off the flame and cover with a lid.
