Ingredients:
1 kg sardines
1/2 tsp haldi
2 tbsp vinegar
1 onion (sliced)
2 sprigs curry leaves
1 tsp salt
coconut oil for frying

For the masala paste
1/2 tsp mustard seeds
1/2 tsp cumin seeds/jeera
1 tsp turmeric/haldi
1 tbsp tamarind pulp
5-6 green chillies
1/2" ginger
3-4 cloves garlic
1/2 onion (roughly chopped)
2 sprigs curry leaves
salt to taste
ground masala paste |
1/2 tsp mustard seeds
1/2 tsp cumin seeds/jeera
1 tsp turmeric/haldi
1 tbsp tamarind pulp
5-6 green chillies
1/2" ginger
3-4 cloves garlic
1/2 onion (roughly chopped)
2 sprigs curry leaves
salt to taste
Steps:
- Clean and wash the sardines well.
- Marinate with salt, vinegar and haldi powder for half an hour.
- In a mixie jar, add all the ingredients for the masala paste and grind to a coarse paste.
- In a pan, heat some coconut oil.
- Add the fish and fry till cooked on both sides and set aside.
- In the same pan, add a little more coconut oil, if required and add the curry leaves and sliced onion.
- Fry till the onions are light brown and add in the ground masala paste.
- Fry for about 2-3 minutes.
- Place the fried sardines in the pan and coat with the masala.
