Healthy Nana Muffins - Sabrina

Ingredients:
1/2 cup nuts
1/2 - 3/4 cup shredded coconut
2 tbsp flaxseed
1/2 cup coconut oil or butter
1 cup whole / multigrain flour
1 cup rolled oats
1 tsp baking soda
1/2 tsp salt
1 tsp vanilla essence
1 tsp cinnamon powder
1/4 tsp nutmeg powder
4 mashed bananas to sweeten (add more as is required)
1-2 eggs (optional) 
1 cup jaggery or 1 cup diced apples (sweeten as needed)

Steps:
  1. Mix all the ingredients together in a bowl. 
  2. Pour into a muffin pan.
  3. Bake at 160C for 20-25 minutes. Muffins should be golden brown. 
  4. After 20  minutes, check if more time is needed or not. Poke a toothpick / fork - if it comes out clean, it's done.
