Beetroot Salad - Rosy aunty

Ingredients:
1 large beetroot
1 medium onion
1/2 -1" ginger
1 long green chilli
1 medium tomato (optional)
coriander leaves (to garnish)*optional
salt and vinegar to taste

Steps:
  1. Wash and boil the beetroot till it is cooked and crunchy. Don't overcook.
  2. Peel the boiled beetroot and cut into roundels or medium thick slices.
  3. Peel and wash the onion and cut into roundels or thin slices.
  4. Slice the green chilli and cut into big pieces.
  5. Finely chop the ginger.
  6. Transfer all to a mixing bowl, add salt and vinegar.
  7. Mix everything well using your hand and refrigerate it before serving.
  8. ENJOY!
