1 large beetroot
1 medium onion
1/2 -1" ginger
1 long green chilli
1 medium tomato (optional)
coriander leaves (to garnish)*optional
salt and vinegar to taste
Steps:
- Wash and boil the beetroot till it is cooked and crunchy. Don't overcook.
- Peel the boiled beetroot and cut into roundels or medium thick slices.
- Peel and wash the onion and cut into roundels or thin slices.
- Slice the green chilli and cut into big pieces.
- Finely chop the ginger.
- Transfer all to a mixing bowl, add salt and vinegar.
- Mix everything well using your hand and refrigerate it before serving.
