Ingredients:
To grind:
4 slices bread
1/2 cup sooji (semolina)
1/2 cup yogurt
1-2 green chillies
6-7 cloves garlic
1/4th cup water
To add to the batter:
1 tomato (chopped)
1 small piece of pumpkin (grated)
2 carrots (grated)
1 capsicum (finely chopped)
1 big onion (finely chopped)
1 tsp jeera
1 tsp mustard seeds
1 tsp chilli flakes
1 tsp salt
oil (for frying)
- In a mixie jar, add cut bread pieces, sooji, yogurt, chillies, garlic and water and grind to a fine batter
- Pour the ground batter into a large mixing bowl.
- Add the tomatoes, pumpkin, carrot, capsicum, onion, jeera, mustard seeds, chilli flakes and salt. Mix well for 2-3 minutes. Add water as needed.
- Heat oil in a nonstick pan.
- Pour 1 full ladle of batter in to the pan in a round shape and spread evenly.
- If the sides of the batter sticks to the pan, pour a bit of oil on the edges and cook covered for about 1 minute.
- Flip the utappam and cook the other side till it is crisp
- Flip again and fry till crisp.
