Ingredients:
1 kg cabbage (cut into large square pieces)
3 large onions (sliced)
3 medium tomatoes (chopped)
2 green chillies (chopped)
1 1/2" ginger (chopped)
10 cloves garlic (chopped)
3 tsp pepper powder
1/2 tsp turmeric powder
small lime size tamarind (soak in water)
3 tbsp oil
Steps:
- In a large cooking vessel, heat oil.
- Add the onions and fry till translucent.
- Add the green chilli, ginger, garlic and saute for 2-3 minutes.
- Add pepper powder, turmeric and saute for 2 minutes.
- Add tomatoes, tamarind water and 1/4 cup water and cook till tomatoes melt.
- Add cabbage and salt, mix well.
- Add 1 cup water and cook covered on low flame till cabbage is cooked and crunchy. Adjust salt, vinegar and pepper if desired.
