Recipe by Chrysl Castelino
Ingredients:
3 large ripe tomatoes (roughly chopped)50 gms tomato paste
1 tsp onion powder
1 tsp garlic powder
2 tbsp olive oil / sunflower oil
1 tsp pizza seasoning / mixed dry herbs
1- 2 tsp paprika powder
1/2 tsp pepper powder
1 tbsp sugar
200 ml water
Steps:
- Heat oil in a saucepan and add the chopped tomatoes and fry.
- Once the tomatoes are soft, add the tomato paste and all the dry herbs and spices.
- Add in the water and bring it to a boil.
- Season with salt and sugar. The sugar helps to balance the acidity from the tomatoes.
- Continue to boil the sauce for another 10-15 minutes stirring it regularly until it thickens and comes together.
- ENJOY!
- You could also add some fresh basil if you like.
- I prefer to keep this sauce a bit chunky and hence I do not puree the tomatoes or peel off their skin. This sauce tastes amazing on pizzas and can be used in various pasta dishes.
- You could make this in advance and store it in the fridge for about 2 weeks or you could freeze it. This way it stays fresh for about a month.
