Pepper Crabs - Rosy Aunty

Ingredients:
500 gms whole crabs (4 large)
1 large onion (sliced)
2 medium tomatoes (chopped)
1/2" ginger (finely chopped)
1 clove garlic (chopped)
1 green chilli (slit)
2 tsp pepper powder 
1 tsp cumin powder
1/4 tsp turmeric powder 
2 tbsp coriander leaves (chopped)
2 tbsp oil 
salt as required 
vinegar (optional)

Steps: 
Cleaning crabs
  1. Wash the crabs in clean water
  2. Remove the shell, pulling from the back of the crab
  3. Remove the gills and intestinal parts
  4. Remove anything that's not pure white
  5. Chop off ends and sharp edges of legs
  6. Wash again in water and cut the body into 2 pieces
  7. Drain them in a colander
Pepper crabs:
  1. Heat oil in a pan. 
  2. Add onion, ginger, garlic and green chilli. Saute until onion is slightly brown in colour.
  3. Reduce the flame to low and add pepper, cumin and turmeric powders. Fry for a few seconds. 
  4. Add tomatoes and continue frying till it is cooked and soft for 5-10 minutes. Add a little water if required.
  5. Add salt and vinegar (optional) if required.
  6. Add crabs one by one. Mix well with the masala.
  7. Add 1 cup of water and mix well
  8. Cover with a lid and allow it to cook on medium flame for 5 minutes stirring in between.
  9. Once cooked, add chopped coriander and cook for 2 more minutes until gravy is semi thick and switch off the flame.
