Slow Cooked Pork Ribs - Sunil Nambiar

Ingredients:

2 racks of baby back pork ribs (approx. 850 gms each) – Leave some of the fat on, for some extra lovin! 

Dry rub mix:

1 tbsp paprika powder
1 tbsp red chili powder
1 tbsp cumin powder
1 tbsp salt (or adjust to taste)
1 tsp pepper powder

Nambiar's Home Made Chili Paste:

8-10 cloves garlic (cooked)
4-6 dry red chilies (crushed)
1/2 tsp soy sauce
vinegar to taste
extra virgin olive oil to taste
salt to taste

Steps:

Nambiar's home made chili paste

  1. Mash the cooked garlic into a paste. 
  2. Add crushed red chilis, soy sauce, vinegar, extra virgin oil and salt and mix well. Keep aside.

  3. Apply the dry rub mix to the pork ribs.
  4. Cover with foil and place in the oven. Bake at 300 F for 2 hours.
  5. Once baked, baste the pork ribs with the Nambiar's Home Made Chili Paste. 
  6. Broil for 5 to 8 minutes until outer layer has that little crunch.
