Recipe by Sunil Nambiar
Ingredients:
2 racks of baby back pork ribs (approx. 850 gms each) – Leave some of the fat on, for some extra lovin!
Dry rub mix:
1 tbsp paprika powder1 tbsp red chili powder
1 tbsp cumin powder
1 tbsp salt (or adjust to taste)
1 tsp pepper powder
Nambiar's Home Made Chili Paste:
8-10 cloves garlic (cooked)
4-6 dry red chilies (crushed)
1/2 tsp soy sauce
vinegar to taste
extra virgin olive oil to taste
salt to taste
Steps:
Nambiar's home made chili paste
- Mash the cooked garlic into a paste.
- Add crushed red chilis, soy sauce, vinegar, extra virgin oil and salt and mix well. Keep aside.
- Apply the dry rub mix to the pork ribs.
- Cover with foil and place in the oven. Bake at 300 F for 2 hours.
- Once baked, baste the pork ribs with the Nambiar's Home Made Chili Paste.
- Broil for 5 to 8 minutes until outer layer has that little crunch.
