Carrot Cake - Marina

Ingredients:
1 cup sugar
2 cups all purpose flour/maida
1 tsp baking powder
1 tsp baking soda
3 cups grated carrots (about 4 carrots)
4 eggs
100 gms walnuts
1 1/2 cup oil

Steps:
  1. In a large bowl, beat eggs. 
  2. Add oil and grated carrots.
  3. Sieve flour, baking powder and baking soda.
  4. Fold in the dry ingredients into the wet mixture - a small quantity at a time. 
  5. Lastly add chopped walnuts. 

  6. Pour the mixture into a baking tray. Bake at 180C for about an hour. Insert a toothpick/skewer, it should come out clean. If required, bake further.
