Crumb Date Cake - Karen Pereira

Ingredients:
Crumb Mixture
1 1/2 cups quick cooking rolled oats
1 1/2 cups flour
1 cup brown sugar
3/4 tsp baking powder
3/4 tsp baking soda
3/4 tsp salt
3/4 cup butter

Date filling
450 gms chopped dates
3/4 cup water
3 tbsp brown sugar
1 tbsp lemon juice

Steps:
Crumb mixture:
  1. In a large bowl, mix together the oats, flour, brown sugar, baking powder, baking soda and salt.
  2. Using your hands, rub butter onto dry mixture until it becomes like crumbs.
  3. Transfer half the mixture into a greased 8 inch square pan, save the other half for the topping.
Date filling
  1. In a saucepan, cook dates with water and sugar till soft. Let it cool.
  2. Stir in lemon juice.
  3. Spread the filling over the crumb layer and sprinkle in the remaining crumb mixture. Pat lightly.
  4. Bake at 350 degrees for 20-30 minutes.
  5. Cool and cut into squares.
