Fruit Cake - Karen Pereira

Ingredients
130 gms flour
90 gms sugar
90 gms butter
2 eggs
1/2 tsp baking powder
160 gms of nuts, raisins, candied peel, tutti fruiti (soak in rum for 2 hours)
4 tbsp caramel
1/2 tsp caraway seeds/fennel
1/2 tsp nutmeg 
1/2 tsp clove
1/2 tsp cinnamon

Steps:
  1. Sieve baking powder, caraway seeds, nutmeg, cloves and cinnamon together. 
  2. Add butter, eggs, caramel, sugar and rum-soaked ingredients. Mix well.
  3. Add flour. Prepare batter. 
  4. Bake for 1 hour 15 minutes at 375 degrees.
