Ingredients:
2 big brinjals
3 onions (sliced)
3 tomatoes (chopped)
1" ginger (juliennes)
4 green chilis (slit)
1/2 tsp turmeric
1 tsp red chili powder
1 tsp sugar
1 tsp fenugreek seeds/methi
2 tsp aniseeds/saunf
10-15 cashew nuts
1 tsp garam masala
a little lime juice
coriander leaves (garnish)

1 tsp fenugreek seeds/methi
2 tsp aniseeds/saunf

1 tsp garam masala

coriander leaves (garnish)

Steps:
- Wash, dry, cut the brinjals into cubes, deep fry and keep aside.
- In a vessel, heat oil.
- Add fenugreek seeds, aniseed and onions and fry.
- Add green chilis, tomatoes, ginger and cashew nuts. Fry till tomatoes are cooked.
- Add sugar, salt, lime juice, chili powder, garam masala and turmeric. Fry for a while then add fried brinjals and mix well.
- Garnish with coriander leaves.
