Ingredients:
2 cups basmati rice
2 cups hot water
2 large onions (sliced)
1/2 cup peas
10-12 french beans (cut into small pieces)
2 medium carrots (chopped into small cubes)
2 potatoes (chop into small cubes)
6 peppercorns
2" cinnamon
5 cloves
4 cardamom
2 tbsp ghee
salt to taste
Steps:
- Wash and soak the rice for 30 minutes.
- In a non stick vessel, heat ghee.
- Add the peppercorns, cinnamon, cloves, cardamom, onions and fry on medium flame till light brown.
- Add the peas, beans, carrots and stir fry well.
- Add the rice, fry for 5 minutes and keep mixing.
- Add hot water, salt and bring to a boil.
- Stir well and cook covered on low flame till all the water is absorbed.
- Meanwhile, fry the potatoes till light brown.
- Garnish the pulao with the fried potatoes.
