Mixed Vegetable Pulao - Maizy aunty

Ingredients:

2 cups basmati rice
2 cups hot water
2 large onions (sliced)
1/2 cup peas
10-12 french beans (cut into small pieces)
2 medium carrots (chopped into small cubes)
2 potatoes (chop into small cubes)
6 peppercorns
2" cinnamon 
5 cloves
4 cardamom
2 tbsp ghee
salt to taste 

Steps:

  1. Wash and soak the rice for 30 minutes. 

  2. In a non stick vessel, heat ghee.
  3. Add the peppercorns, cinnamon, cloves, cardamom, onions and fry on medium flame till light brown.
  4. Add the peas, beans, carrots and stir fry well. 
  5. Add the rice, fry for 5 minutes and keep mixing. 
  6. Add hot water, salt and bring to a boil. 
  7. Stir well and cook covered on low flame till all the water is absorbed. 

  8. Meanwhile, fry the potatoes till light brown. 
  9. Garnish the pulao with the fried potatoes. 
  10. ENJOY!
