Ingredients:
3 potatoes (cut in cubes)
2 medium onions (finely chopped)
10 curry leaves
3 green chilies (slit in half)
1" ginger (chopped)
1 tsp jeera *optional
4-6 tbsp coconut milk
oil
salt to taste
Steps:
- In a pressure cooker, heat oil.
- Add the onions and fry till golden.
- Add the curry leaves and jeera. Fry for 2-3 minutes.
- Add the potatoes, chili, ginger and salt along with 3 cups water. Add the lid and weight and pressure cook for 3-4 whistles.
- Once the pressure is released, add coconut milk powder and mix well.
- Grate ginger on top for added fragrance and taste.
