Chili Garlic Fried Rice - Chrysl

Ingredients:

250 gms short grain rice (cooked & chilled)
10-12 cloves garlic (roughly chopped)
4-5 dry red chilies (roughly cut)
2 star anise
chicken/ vegetable stock cube (either 1 large or 4 small cubes)
1 tbsp vinegar
salt to taste
4-5 tbsp oil

Steps:
  1. Heat oil in a wok and add the star anise. 
  2. Add in the garlic and fry till lightly browned.
  3. Add the chopped red chilies and fry for a minute or two. Be careful not to burn the chilies.
  4. Powder the stock cubes and add it to the wok.
  5. Now add the cooked rice and vinegar.
  6. Gently mix till well combined.
  7. Check for seasoning. Add salt if required.
  8. Serve hot with any Indo-Chinese or Indian gravy
