Ingredients
2/3 cup coconut flour
1/3 cup unsweetened cocoa powder
1 tsp baking soda
1/4 tsp salt
4 eggs
1/2 cup maple syrup

1 tsp baking soda
1/4 tsp salt
1/4 tsp cinnamon powder
1 1/2 tbsp chia seeds
4 eggs
1/2 cup maple syrup
1 tbsp vanilla powder
2 tsp vanilla essence
2/3 cup melted coconut oil and ghee
1 cup roasted almonds
1 cup dark chocolate chips
2 tbsp chocolate shavings
- Preheat oven to 200C and line a baking tray with parchment paper.
- In a large mixing bowl, combine coconut flour, cocoa powd.er, vanilla powder, chia seeds, cinnamon powder, baking soda & salt. Whisk together removing any clumps in flour.
- In small separate bowl whisk eggs with maple syrup, vanilla essence, melted coconut oil and ghee.
- Pour into bowl with flour and combine.
- Add the roasted almonds, 3/4 cup chocolate chips and combine.
- Shape the cookies, while carefully inserting a few chocolate chips on top.
- Arrange the cookies on a baking tray and sprinkle chocolate shavings.
- Bake for 12-15 minutes on 200C.
- Once it cools, store in an airtight container.
- ENJOY!
Notes:
- The cookies turn out soft, not crispy.
- Store in the fridge for consumption over a few days.
- You can roast raw almonds in an oven at 200C for about 10 minutes. Keep checking to ensure it doesn't burn.
