Ingredients:
500 gms mutton
250 gms moong dal
1 big onion (chopped)
4-5 cloves garlic (chopped)
1 1/2" ginger (chopped)
1 tsp turmeric powder
1 tsp red chili powder
1 1/2 tsp garam masala powder
1 1/2 tsp pepper powder
1 tsp jeera/cumin seeds
4-5 green chilis
pinch of amchoor/raw mango powder
2 tbsp ghee
salt
Steps:
- Boil the mutton and the dal together with the ginger and 1/2 tsp salt till the dal is tender, not fully cooked. Separate the dal and mutton from the broth and save the broth.
- In a large cooking vessel, heat ghee.
- Add cumin seeds and fry lightly.
- Add garlic and onions and fry till onions are light brown.
- Add the boiled mutton and dal and mix well. Let it cook for 2 minutes.
- Add the green chilies, red chili powder, salt, pepper powder, garam masala powder and mix well.
- When the ghee starts to separate, slowly add the broth a little at a time according to desired consistency and keep stirring.
- Cook covered on low heat until the mutton is fully cooked.
- Garnish with fresh coriander leaves and amchoor powder.
- Serve hot with bread or rice.

Notes:
- You can use chana dal (Bengal Gram) instead of moong dal.
