Minced Meat Shakshuka - Jean

Ingredients:
oil
1 capsicum (cut into small squares)
2 big tomatoes (peeled and chopped)
1 onion (chopped)
6 eggs
50 gms minced meat or meatballs
3-4 green chilis (chopped)
3-4 tbsp cheese (cheddar, gouda, parmesan or any other )
rosemary or oregano to taste
salt to taste
pepper to taste

Steps:

  1. In a pan, heat oil.
  2. Add capsicum, onion and green chilis and saute till onions turn pinkish.
  3. Add tomato, cook till the oil separates.
  4. Add the minced meat and a little water and cook till the meat is cooked well and the gravy is semi dry.
  5. Add the eggs, salt, pepper and cheese and cook covered till the eggs are done to your liking.
  6. ENJOY!

Notes:

  • If you are preparing the dish for lunch, add 1 chopped onion.
