Olan (Keralite Vegetable Stew Curry) - Oreen

Ingredients:

2 medium size onions (chopped into tiny squares)
handful of curry leaves
2" ginger (grated)
1 green chili (slit)
2 tbsp ghee
3 medium potatoes OR carrots OR 1 cup black eyed beans with 250 gms orange pumpkin (cut into medium chunks)
1 tsp salt
1 tsp pepper powder
4 tbsp coconut milk powder

Steps:

  1. In a pressure cooker, heat ghee.
  2. Add the onion, curry leaves, 1" ginger, green chili, and lightly fry.
  3. Add potatoes/ carrot/ black eyed beans + pumpkin with 2 cups water and pressure cook for 2 whistles with salt (see notes)
  4. Once done, add 1" inch of grated ginger with pepper powder and coconut milk powder before serving.
  5. ENJOY!
Notes:
  • If you are using pumpkin, make sure it’s mashed before serving.  Other ingredients shouldn't be mushy.
  • You can add pepper before serving instead of adding it with the salt.
