Banana Bread Pudding - Jean

Ingredients:
12 slices bread
3 eggs
3 cups milk
1 1/2 tbsp vanilla essence
4 tbsp sugar (add more if you like it sweeter)
1/4 tbsp cinnamon powder
1/2 cup almonds (peeled)
1/2 cup cashew nuts
2 tbsp sunflower seeds (optional)
3/4 tsp salt
2 bananas (sliced thin)
1/2 cup chocolate chips

Steps:
  1. Chop bread crust & place at the bottom of a glass casserole. Cut the rest of the bread and place above.
  2. In a large bowl, whisk eggs. Add the milk, vanilla essence, sugar, cinnamon powder and salt. Mix together.
  3. Pour the mixture over the bread and let it soak the milk. Press down lightly with a spoon.
  4. Add the almonds, cashew nuts and sunflower seeds.
  5. Bake at 375 degrees for 35-40 minutes.
  6. When almost done, add a layer of sliced bananas.
  7. Sprinkle chocolate chips and continue baking till you poke a knife and it comes out clean.
