Ingredients:
4 eggs
1 big red onion (chopped finely)
1 tsp garam masala powder
1 tsp tomato paste
1/3 tsp salt
1/2 tsp turmeric powder
1 1/2 tbsp chopped coriander leaves
2 tbsp oil
1 tbsp butter
1 tbsp heavy cream
Steps:
- In a non stick pan, heat oil and butter.
- Add the onions and fry till light brown.
- Add garam masala powder, tomato paste, salt, turmeric powder and fry for about 30 seconds.
- Add 2 tbsp water and mix well. Fry till the water evaporates.
- Break the eggs in the pan directly.
- Using a non stick spatula, mix everything together and cook for 30-45 seconds till the eggs are half cooked.
- Add the heavy cream, mix well and cook till the eggs are done.
- Add the chopped coriander and let it cook together for another 30 seconds.
- Adjust salt and pepper according to taste.
- Serve with hot toast.
