Egg Burji (Scrambled Eggs)- Sasha

Ingredients:
4 eggs
1 big red onion (chopped finely)
1 tsp garam masala powder
1 tsp tomato paste
1/3 tsp salt
1/2 tsp turmeric powder
1 1/2 tbsp chopped coriander leaves
2 tbsp oil
1 tbsp butter
1 tbsp heavy cream

Steps:

  1. In a non stick pan, heat oil and butter. 
  2. Add the onions and fry till light brown.
  3. Add garam masala powder, tomato paste, salt, turmeric powder and fry for about 30 seconds. 
  4. Add 2 tbsp water and mix well. Fry till the water evaporates.
  5. Break the eggs in the pan directly. 
  6. Using a non stick spatula, mix everything together and cook for 30-45 seconds till the eggs are half cooked. 
  7. Add the heavy cream, mix well and cook till the eggs are done. 
  8. Add the chopped coriander and let it cook together for another 30 seconds. 
  9. Adjust salt and pepper according to taste.
  10. Serve with hot toast.
