Chicken Curry - Cellu

Ingredients:
1 kg chicken
1-2 onions (sliced)
2 tbsp ghee
1 - 2 cubed potatoes *(Optional)
coriander leaves (garnish)
salt to taste 
vinegar to taste *(Optional)

To grind:
List 1- to dry roast, cool and then grind:
1 big onion
6-8 cloves garlic
1" ginger
1 cup freshly grated coconut
8-10 red chillies
1 1/2 tbsp coriander seeds
1 tbsp cumin seeds
1 tbsp mustard seeds
1/2 tbsp badishep/fennel seeds
1/2 tbsp methi/fenugreek seeds

List 2- To grind to a fine paste with above:
small piece cinnamon
2-3 cloves
2-3 cardamom pods
1/2 tbsp turmeric powder
1 tsp tamarind paste (adjust to taste)

Steps:
  1. In a cooking dish, add oghee.
  2. Add onions and when translucent, add chicken pieces.
  3. Add a little salt, mix well and cook for 15-20 minutes or till almost done. Add a little water if needed.
  4. If preferred, now is the time to add potato cubes.
  5. Add the ground masala paste and bring to a boil till potatoes and chicken are fully cooked. 
  6. Garnish with fresh coriander leaves.
