Mediterranean Baked Eggplant - Oreen

Ingredients:
1 large eggplant/brinjal (sliced in long quarter inch slices)

To marinate:
1/4 cup olive oil
1 tsp zaatar
1 tsp summac
1/2 tsp salt

Steps:

  1. Marinate the brinjal slices in olive oil, zaatar, summac and salt. 
  2. Bake in an oven at 400F for 30 minutes.
  3. ENJOY!
