Mixed Vegetable Rice - Oreen

Ingredients:
500 gms frozen mixed veggies - carrots, cauliflower and broccoli (store bought or cut into tiny pieces)
1/4 cup urad dal
1 tsp pepper powder
1 tsp turmeric powder
1 tsp salt
1 tbsp ghee

Steps:
  1. In a vessel, heat ghee.

  2. Add the urad dal, turmeric, pepper powder and salt and saute till the urad dal is semi cooked and crunchy.
  3. Add the vegetables and fry for about 10 minutes on medium flame till the vegetables are cooked.
  4. ENJOY!
Notes:
  • For ease, you can chop the vegetables into smaller pieces or rice them in a food processor.
  • To make this dish as a Kerala-style thoran, add 1/4 - 1/2 cup grated coconut and 2-3 sprigs fried curry leaves.
